It all started with their father. Carmen and Michael absorbed the atmosphere of the restaurant, cooking, and perfecting dishes to pass on the magic of flavor of a properly prepared meal. There are no small details: spices and seasonings are measured strictly, added at precisely the right moment, and the temperature of the fire must be carefully calibrated for each dish, which also varies. Carmen mastered this science, albeit away from the restaurant.
Yes, his older brother Michael never let him cook in the family restaurant, as it was he whom their father bequeathed this job. Trying to find himself, Carmy moved to New York, where he got a job at a fine dining restaurant. He worked for a long time, learning from the best masters to achieve the goal of his life – public recognition, which culminated in a James Beard Award.
But goals are one thing, and responsibilities are another. His brother recently ended his life by shooting himself in the head, leaving the family restaurant, famous for its Italian beef, to be managed by his younger brother. Whether he wants to or not, he will have to go to distant Chicago to take care of business.
The first thing the main character faced was the resistance of the staff. All the innovations and changes that Carmy proposes are met with hostility, even though they could finally pull the restaurant out of debt. For example, before his death, Michael borrowed three hundred thousand dollars from their uncle, and now the younger brother must repay this debt if he doesn't want to lose the restaurant.
